Weekly Recipe: Hootenanny Pancakes

My favorite meal of the day is generally breakfast. I am not a big fan of cold cereal - it just doesn't fill me up. This week I will share with my dh and ds's favorite Saturday morning breakfast.
Hootenanny Pancakes
1/2 cube Butter (1/4 cup)
1 cup Milk
1 cup Flour
6 eggs
1/2 tsp Vanilla
dash of Salt
Turn oven to 400. Put butter on cookie sheet and melt in oven. Put rest of ingredients in blender and mix well. Pour into cookie sheet of melted butter. Bake for 20-25 minutes until bubbly and beginning to golden brown. Top with your favorite pancake topping.

These pancakes are handy because you are not standing at the griddle feeding the rest of the family before you can finally sit down and eat. You put the in the oven, clean up, then everyone sits down together for breakfast.

  1. Speaking of breakfast, this morning I was craving granola with yogurt, so I figured I would make some. My mom is out of town, so I had to find a recipe on-line. Here is the recipe I sort of tried. I had to improvise (of course), so here is what I did. I didn't have any cranberries, walnuts (allergic), or sunflower seeds, and I thought cornmeal sounded strange, so I omitted that. I used butter instead of corn oil, and added sesame seeds and pure maple syrup, and doubled the almonds. I melted the butter with the honey and syrup, then tossed it with the rest of the ingredients. It is pretty "yum-o!!" If you like granola, you might want to try it!

  5. These are so good. My kids loved them and have eaten them for breakfast and snacks today. Thanks for the great recipe, it beats flipping pancakes any day. I did not believe they would be good with absolutely no sugar so I sprinkled some cinnamon in them, it was good.

  6. Yum, cinnamon is a good idea - and we don't miss the sugar in them because they get plenty of syrup and powdered sugar on top.
