You all know how much I love food -- and making food, so I though I would add a weekly post letting you know my favorite recipe from the week. Here's last week's:
Since I worked all day almost everyday last week, we didn't have very good food (we ordered pizza, ate leftover pizza, etc.) But, I did make dinner on sunday. I was inspired by our trip to Mexico where they had the best Chicken Tacos. Not having a recipe, of course, I thought I would wing it. They were pretty good. I will definitely make them again. Here's what I did (sorry I didn't measure anything!):
Chicken Tacos
Chicken Breasts
Olive Oil
Crushed Garlic
Mexican Oregano
Paprika
Ground Cumin
Corn Tortilla's
Put (in this order) olive oil (just pour some in), garlic, chicken breasts (how many are eating??) in a crock pot. Sprinkle oregano, paprika, and cumin over the top. Cook on low for about 4-5 hours. Remove from crockpot. Shread it with a couple of forks. Warm the tortilla's on a hot (ungreased) griddle so they are easy to manage (sometime I spray them with a water bottle before heating them - it really softens them up). Roll some chicken up in it (like a taquito). Fry in about a 1/4 inch of oil (seam side down of course). Then roll it around to get all the sides (not too soon though, or they come unrolled). Let drain on a paper towel covered plate. Then serve -- we like them with guacamole, black beans, and salsa. Serve rice too, then you have a meal!! Oooh, and brownies for dessert :)

I love it, I can't wait to get your weekly recipe. It is so funny because I was just trying to figure out what to make for dinner and this sounds perfect. What is Mexican Oregano as opposed to Oregano??? I think I have all the ingredients. Thanks again. By the way we were boring and did not even watch the superbowl and had no fun treats....boring!!
ReplyDeleteWe had Chicago Style pizza & Chicago style Italian Beef. So good. It was good even though we lost the frecking game. not good.
ReplyDeletemw - I don't really know the difference, I just always use the mexican oregano in my salsa & tomato sauce, so it is what I have on hand. I think regular would be just fine.

I was rooting for the Bear's in your name Moesha but I have to say I didn't even end up watching the superbowl......Did I miss anything? Great plays, good commercials, or striping at half-time???
ReplyDeleteThe game was terrible except for the first kickoff. Other than that it was a little rainy & Prince was terrible in my eyes. I will forgive your bubbles. In the end, the BEARS ARE THE BEST!!
ReplyDeleteYes, the first couple of minutes of the game were the best. And yeah, who picked Prince for the half time show?? Lame!!
ReplyDeleteI know. Everyone was talking about that at the party we were at. All the guys were like is Prince a football fan halftime show? NO. We all voted for U2. That was the best halftime show ever. Terrible Terrible.
ReplyDeleteI'm not a big fan of Micheal Jackson but remember when he did that one and the whole audience held up these posters that made a picture....Am I dating myself? It had to be 10 or 12 years ago but that was good.
ReplyDeleteI love the recipe a week idea. I so desperately need ideas for meals, I am really getting bored with what I make. By the way, do you have an easy beef stew recipe - especially for the crockpot. I bought the meat but I can't find the recipe I used to use.
ReplyDeleteI went to a Superbowl party at my brother's house. I didn't watch the game but me and my sister's played board games so that was fun. I made my first broccoli salad which I thought was pretty yummy. Sorry Moesha about the Bears.
