For this week's recipe, I think I will post a simple crock-pot sensation - super easy. Oh, and yes, we eat a lot of chicken . . .
Crock Pot Chicken (for Burritos or Salad)
4 Chicken Breasts
1-2 cups Salsa
1 or 2 cans Black Beans (drained)
Spray the crockpot with Pam, then put in the chicken breasts. Set it on low for a few hours, until it is cooked through. Remove it from the crockpot, shread it with 2 forks, put it back in the crockpot, then add the salsa and the black beans. Cook on low for another 30-45 minutes.
Makes excellent filling for burritos/tacos (just add cheese, lettuce, avacado, tomato, etc.).
Also makes good chicken salad.

2 cups Flour
2 cups Sugar
1 tsp Baking Soda
1 tsp Salt
1/2 tsp Baking Powder
3/4 cup Water
3/4 cup Buttermilk
1/2 cup Butter
2 Eggs
1 tsp Vanilla
4 oz. melted Unsweetened Chocolate
(or 2/3 cup Cocoa)
Bake @ 350 30-40 min. 2 round pans, 50-60 min. 9x13 pan.

I'm prego, working f/t, and our whole fam has been sick for the last month with different variations of cold (in fact today I just found out my 2 year old has eye infection)... so to say the least mac and cheese and frozen pizza are happening for dinner at least once a week. My dh the other day said, in the nicest way possible, that he knows I don't feel good, but we should find some other simple things to eat. I think this recipe may save the day! We're having it tonight. By the way, I'm Moth-woman's SIL, I was just sneaking a peek at your blog today...

ReplyDeleteOh, a secret tip I always use -- I NEVER have buttermilk, because we don't use it enough. I either use the powdered buttermilk (in the baked goods section of your grocery store) or I use regular milk - just add a couple teaspoons of lemon juice and let it sit. This thickens it up and you get the same effect as buttermilk in cooking (you can also use vinegar - it makes more of a sour milk, but works the same way).

ReplyDeleteYes! I make buttermilk pancakes all of the time with powder - I think I have used the lemon juice too.
